Shrimp Alfredo the Nutritious Way
Here’s what I did!! Cooked the penne pasta until done, sprayed my pan with non stick cooking spray and dumped it in. Then I cut up my shrimp into bite sizes pieces that I thawed out in warm water. Then put the spinach on top of the noodles/shrimp mixtures. I used about a cup of spinach, give or take and I took off most of the stems and made the pieces a little “smaller”. Then I took the mushrooms, drained them, cut up 4 green onions, and opened a can of tomatoes. I also put a little garlic powder into the mix, but didn’t measure it, I just eyeballed it.
I put that on the stove till it was hot, then added half a jar of Alfredo sauce. I used lower calorie Ragu and no one noticed. Then mixed it all together let it cook until boiling, and then poured over my pasta. Then I spread my cheese over it, and then popped it into the over for about 30 minutes at 350°. Maybe less, I just wanted it to “look” good so I kept checking it.
Just remember that just because you are eating healthy doesn’t mean you have to give up everything and the flavor is still there I promise. Try this awesome recipe at your house and let me know what you think!! Make sure you share with your friends too!! Happy cooking!! Heidi
