Copycat Lofthouse Cookies

If you have been to any local store you know that Lofthouse cookies line the shelves and scream buy me! Ok, so they don’t really scream buy me, but I do have an inner struggle with them everytime I see them!! But when it was time to make these shamrock cookies I knew I had to see where the road took me.  So I opened my Internet and got to searching, and there were a lots of recipes to use.  But in true SMSL with Heidi fashion, we just adapted, added too and made our own version of the  Copycat Lofthouse Cookies recipe!! I hope you enjoy! !


Copycat Lofthouse Cookies

1/2 cup sour cream
1 cup sugar
1/2 cup butter softened
2 eggs
1/2 tsp vanilla
3 1/2 cups flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt


In mixer bowl, combine sour cream, sugar, butter, eggs and vanilla.  Mix well.  


In a smaller bowl combine flour, baking powder, baking soda, and salt. Then mix the two together until it is mixed together. (Be careful not to over mix.)

Then roll out onto a floured surface if you are using a cookie cutter. If not, just use a cookie scoop to get your dough, roll it into a ball and then flatten it on the sheet.  


Bake at 350 degrees Fahrenheit about 10 minutes, they look like they still need to bake, but trust me and pull them out and place onto cooling sheet or parchment paper.

 After the cookies are cooled you can the frost them with Buttercream frosting. I just used the Wilton’s Buttercream frosting recipe and added green food coloring in it to make it more festive! I hope you enjoy this delicious recipe as much as we do and have a Happy Saint Patrick’s Day too!
