Mint Buttercream Cupcakes
17 years ago today at 1:56 am I had our daughter Elizabeth and I wasn’t happy that she was born on a holiday. I could think of nothing worse than to have a birthday on a holiday, but through the years she has embraced it, loved it and enjoyed all things green! So through the years I’ve made a plethora of cupcakes, cookies, cakes, and the like, but they all had a common flare, they all had to be green. So I learned early on to make it fun for her as well as my myself! But this year we have outgrown bringing treats to friends, classmates and so on, but that didn’t stop me from making these delicious Mint Buttercream Cupcakes to help her celebrate her special day!
For the Mint Buttercream Cupcakes this year I totally cheated and used a box cake, mint flavoring and the Wilton’s Buttercream frosting recipe and added green food coloring in it to make it more festive! So all I had to do was prepare the white cake mix according to the package directions, poured in a teaspoon of mint flavoring to the batter. Then, baked them in the adorable Wilton Cupcake liners I picked up on clearance this time last year. There were even leprechaun top hats on toothpicks, but she wanted “pretty” frosting instead. I also added about a teaspoon of mint flavoring to the buttercream frosting recipe to make them even more minty!
It took me about 2 hours from start to finish to make these yummy treats because they had to cool completely before icing them. But I promise it is worth the wait, because they are heavenly. The next time I make them I’m adding chocolate chips to the batter to make them Chocolate Chip Mint Cupcakes!
